is there any of you using Photo Supreme as a paperless desktop software?
I guess it may not be complicated.

In short it would be using PSU to catalog your invoices 
In large it would be using PSU to catalog anything I have... I tried Copernic desktop a while ago. But I don't want to clutter my disk with indexes on the same datas (plus the one from windows itself...).
AFAIK, the idea of paperless desktop is to digitize your information which is on paper and index it in order to find it quickly.
Nowadays, those informations are often digital so you don't always need to scan paper.
For example, I tried to add a e-mail to my database.
In the options, I added MSG in the file extensions.
I created a folder to store MSG files, as I don't want to put too much mess in my photo collection.
I ingested the folder without copying the files elsewhere (but I usually do with my pictures).
And now I have a MSG file in my database. I can assign any label to it, and double click it to launch the default application and read it.
An XMP sidecar is created.
While this is flawless, a next step in this direction would be text indexing inside PSU (though I guess ingesting the description of a picture is already that).
I was thinking about indexing my music files but right now dedicated software are more useful than PSU.
A part from the usual rush when you need to pay taxes, I think it is useful when you need to gather various type of document: setting up website, create a document to present your association, etc. Isn't it digital asset management in your head before anything else
So, if someone has already gone this way, I'd like to hear about it!

You mention quite a few use cases, i'm not sure PSU is targeted at a number of those. Raising a feature request in Mantis may give you more certainty, perhaps Hert joins in this discussion as well.
Quite honestly, while it seems like the holy grail as you describe in your last sentence, i wouldn't want development effort aimed at other content not related in some way to photography (and video). Invoices (and RFQ/RFP documents) could well be a part of that, but whether the emails you mention should be cataloged, i doubt (you could always save them to PDF and catalog 'm as such). Music is somewhere in the middle, especially because it relates to video.

I do realize that Photo Supreme is PS (Photo Supreme), rather than EATSS (Everything-And-The-Sink Supreme), but I would nevertheless love an extension or "clone" of it (call it (Multi)Media Supreme) that allowed me to catalog stuff such as music. That would obviously be capable of recognizing and editing existing metadata in the music files, as well as starting a "music playshow" rather than a photo slideshow.
Come to think of it, I already have my music collection quite meaningfully organized across folders - and I guess this would make importing and labelling my music files within PSU fairly striaghtforward, even if the existing metadata was not recognized. So, perhaps, the essential thing I'd miss today in Photo Supreme (regarding music) is the ability to load and sequentially play an entire music collection (similar to playing a slideshow) rather than playing one file at a time. Is there already any way to accomplish this?
(I hope you realize that, if this is already possible, the next thing I'm going to suggest is the ability to associate a collection of images with a collection of music files, such that I could start a slideshow and a music playlist at the same time!)

My main interest is to collect Memories, which can be photos, documents, film, recordings, objects ... Whatever they are I try to digitise them, like taking a digital photo of a painting. These digitised items I then try to structure and document. A lot of these items are photos so my key nterest in PSU is obvious. I have enough items to keep me buzy for a long time. But one sunny day I will try to lift my eyes a bit and see if/how PSU can also asist me when structuring the mess, just haven't had the energy to go that way yet. At the moment I seem to spend much time in gathering these items.
Not sure if I will include "the sink" but the scope is today wider than it was some 15 years ago when this life-long quest hit me.
My wish is to have a Archive which will consist of a catalog as well as real and digital items. And when I reach that point (or run out of time) I plan to hand it over to my kids and tell them to to take over as gardeners.
My work to digitise memories may not be same as Vlad's EATSS scope but at least another example of how PSU comes in and plays a key and central role in a major piece of work.

I tried using PSu as a more general document management system for a few years, mainly for PDF files, but also for Microsoft Office document files. PDFs work well with PSu because Adobe generates a nice thumbnail for each one just like a JPG. However I gave up in the finish because it was simply too slow at importing the files for only marginal benefit. Now for all non-image files, and for most non-PDF files, I simply incorporate a 3 letter "author" code" into the start of the file name, and use a Windows program called "Everything" to search for authors. "Everything" is lightning fast compared to the internal Windows search.
My file naming is like
<date> {"-" <time>} "-" <author-code> "-" {<more-description-to-make-unique-file-name>} <file-extension>
For example:
20150114-100236-AJH-test.pdf
Then for example to file all files by AJH I type into "Everything" the 4 characters "-AJH".
It's not a perfect system but gets me by for 99% of use cases.
My file naming is like

I use Evernote for this purpose, it works fine for me. Dropbox is another possibility.
