I've suddenly discovered that when I assign a Person label, the label also gets written into the "Person in image" field of IPTC Extension.
I assume that this is something that was introduced with V3. Looking through the forum, I came across a discussion that seemed to imply that it would only occur with certain pre-defined classes of labels (e.g. any labels in the People|Family hierarchy), but it seems to be occurring for me for any People labels. For example, I now discover that I have "English Students" in the "person in image" field, and this label does not fall under the "Family" tree...
For consistency's sake, I should really go back and re-sync all images with people labels assigned, so as to bring my metadata into line, but I just wanted to check what exactly the expected behaviour should be...

Re: PSU and Person in Image Behaviour
Afaik, the expected behavior - or, more precisely, the designed behaviour - is exactly the one you've noticed: any label inside the People category will be written as "Person in image".
