There are many different ways of using PSu. If I understand your explanation of what you want to do correctly, I would start off by using LABELS (not the same as Keywords and much more powerful). If you drag the edge of the label assignment panel further out to the left it will eventually switch to three columns automatically.

With build 1721 on Windows 10, 'Preferences' is still available in the 'hamburger' menu for me. If it helps, the shortcut is <Control>+<comma>.

They are different. Remember that 'Labels' are unique to PSu and are stored in the catalog. They are always hierarchical.
