Actually only the active tab will be saved (which of course is not necessarily the leftmost one). You could submit a feature request in Mantis if you would like this to change.

Sorry to say "no", I tried that before..
If more than one picture is selected the menu option in the info panel changes from "import metadata to xmp" to "clear content".
