what does the new light table lock option do?

For the life of me, I can't figure out what the new lock option in the light table does, other than turn the box red. I would assume that it should prevent me from changing something, but I don't see any change in behavior.

I see what you mean now. If you take a picture when the lens is toward the bottom of the phone when held sideways, the image is flipped, but if the lens is at the top of the phone, it is fine. Interesting. My landscape oriented photos were fine even before Hert made the correction. I just took a few shots in raw in both orientations and they all display properly. I am running the latest version 3431.

Apple's ProRAW images are flipped

I just tried Apple's new ProRAW format on my iPhone 12 Pro. The files are in the DNG format. Importing into PSu, images taken in portrait orientation are flipped horizontally. Oddly, landscape oriented photos are fine.

Adjust pane > Scale
Change pixel width and height, no change to resolution, Apply and Save

I also tried Resize in Batch. Same result.
