I don't use Affinity, but on your other points:

I don't see any advantage in converting to DNG - but what are your objectives in doing this?

Yes, versioning would be a good way of grouping your images. You may also want to think about how you name your files to help facilitate this.

Openstreetmap don't provide an API, other than for their own tools, and don't provide satellite imagery, so it would need to be some other provider...

You can buy stickers for different keyboard layouts that might help - or, if only a couple of keys that you won't forget, try a custom mapping/remapping using MS Keyboard Layout Creator (assuming you're on Windows)...

Share to folder and ftp certainly have the option to leave or strip metadata. I never email directly from PS, but guess that has the same option.

As Hert mentions, normally you would want to retain the metadata in the file but strip it on export using 'share'...
