Most screen widgets are documented in the tips system.
Open the Tips system and hover over the screen widget that you'd like to learn about. That applies to preferences but also for other screen widgets.

Each level is set to process parent mapping, but only the location level is set to create a keyword. That setting is a "write setting". It means: when I write metadata to the file then I want a keyword for this catalog label. That is unrelated to how you have configured PSU to handle "read settings...

You don't mention how you do AI. But in the LAP you can click "Detect Labels" and that will not assign known labels. You state that your write setting for the catalog label is set to "do not write keyword". But you don't write but read. That sounds like you have a half baked XMP in the JPG files.
Use right click on the JPG and then Metadata -> Convert metadata to XMP.
That fixes half baked XMP blocks by reading the Exif/IPTC metadata (like GPS) from the file and putting it in XMP

You probably deleted the original Objects category years ago and at one point recreated it.
To move your labels from the old Objects category to the original one:
1. Expand the old Objects category
2. Select all labels, with Ctrl+Click
3. Drag them to the original Objects category
